Shrimp Scampi over Sweet Potato Latke

For the Latkes:

1 large sweet potato or yam cooked or microwaved

½ cup of finely chopped roasted chicken meat

1 egg

¼ tsp smoked paprika

1/3 cup finely chopped leaks or shallots

¼ tsp fresh thyme

salt & pepper to taste

panko bread crumbs – as needed

 

Mix first 7 ingredients, start adding panko bread crumbs while mixing until reaching consistency of holding the shape. Create 4 “pucks” 3” diameter, about 1/3” thick, and either fry them in oil for 205 sec/side or bake them at 380F for 40 min.

 

For the shrimp:

8 raw peeled shrimp

¼ cup of Riesling

1 tsp fresh chopped garlic

2 tbsp of olive oil + 1 tsp butter for cooking

1/3 cup finely chopped leaks or shallots

¼ tsp chopped fresh dill or Italian parsley

salt & pepper to taste

4-12 bay scallops optional

 

Heat the oil and the butter in a skillet at medium heat, add the garlic, as it starts to caramelize after 25 sec add the shrimp. As shrimp start to change color, flip them, increase heat to medium high, add the Riesling, after 1 min shrimp ready. Place 2 shrimp onto a latke.

Optional: when turning the shrimp, add the bay scallops, they cook fast, 15 sec/side, continue with adding the Riesling. Add 1-3 bay scallops along with 2 shrimp per latke.
